If you love the Crock Pot, you'll love this Balsamic Beef Roast!
On Sundays, Granny usually cooks a big supper that we eat at 3 p.m. in place of lunch and dinner. It's always good! I never had much of an interest in cooking or canning or really anything that didn't involve my cows and running/throwing discus when I lived at home. Gotta love those teenage priorities!
I would occasionally make my chicken enchiladas in college, but mostly when my brother came over for dinner. Cooking for just myself never feels like reason enough to cook an extravagant meal, but why not?
Times change and although I wish I could get home for Sunday supper every week, these 2,000 miles keep that from happening. So, I've decided to create some of my own awesome suppers! Granny even said she wants to come over to my house for dinner now! When one of us cooks something good we always joke about saving some or sending it to the other person.
I've cooked steaks and a roast before, but never in the Crock Pot, so I wasn't sure how this would turn out, but it was delicious. It made a lot of leftovers too, which have been great for taking to work for lunch.
Balsamic Beef Roast

- 2.5 lbs roast beef, boneless
- 4 cloves garlic, minced
- 1 cup beef broth
- ½ cup balsamic vinegar
- 1 T. honey
- 1 T. soy sauce
- 1 T. Worcestershire sauce
- ½ tsp. red pepper flakes
- 1 tsp. olive oil
- 10 stems Steamed Asparagus
- 1 cup baby red potatoes boiled
Directions:
Combine ingredients in Crock Pot and cook on high for 4 hours
Love Roast for Sunday dinner. I can't wait to try this recipe!
